I love recipes that take minimal effort and the grunt work of cooking gets done for me all day. One of my most used appliances is the slow cooker. I make these delicious, fall off the bone chicken thighs often in our house. Sometimes I’ll change them up with seasoning like lemon pepper or rosemary, but they are fail proof and so good!

I like to use the bone-in, skin-on chicken thighs. The skin has such good flavor! First things first, my recipes are hearty. They aren’t always super healthy. I cook with real butter and won’t apologize for it. Butter makes the world a better place. You obviously don’t want to be eating it 24/7, but when I cook with it, I’m going to cook with it and use the real stuff.

You’ll find with a lot of my recipes, I don’t measure because that’s how I cook-from the heart. So don’t worry about being exact, I always feel like going with my gut and basing the amounts I use off of how much I’m cooking.

First, brown the thighs in a cast iron skillet before slow cooking them. I throw some butter and minced garlic in my pan on medium heat. Don’t crowd them or touch them while they are browning. About 3 minutes per side.

In my slow cooker, I add some more minced garlic in the bottom. I place the thighs on top and the left over juice from the cast iron gets poured all over the chicken. I then season with whatever I feel like. Usually some garlic salt, pepper, etc. Truly, just use what you and your family like! Zack is a huge fan of creole so sometimes I’ll even use that for more of a Cajun flavor. I then slice an onion and layer it all over the top of the chicken. Pop the lid on and cook for 5.5-6 hours! The meat will literally fall off of the bone and your house will smell amazing! You can also add some sliced bell pepper too.
