I’ve made these several different ways and have finally adapted them to my liking. I made them for our family Easter and remembered to take photos to share on the blog. These are SO easy and always turn out great!

Ingredients

• 4 cups self-rising flour (plus more for work surface)
• 2 tbsp bakind powder
• 1 tsp baking soda
• 2 tbsp sugar
• 3 sticks salted butter, cold
• 4 tsp honey
• 2 large eggs plus 1 large egg for wash
• 1 1/2 cups buttermilk, plus 1 tbsp for wash

Directions

1. In a large bowl, whisk together the flour, baking powder, baking soda, and sugar. Cut the butter into 1/4″ slices and add in to the bowl. Using a pastry blender, cut the butter until it’s in small crumbles.
2. Beat 2 eggs and stir in until well combined. Then stir in 1 1/2 cups buttermilk + 4 tsp honey until the dough comes together. It will be a sticky mess. If it’s too dry, you can add more buttermilk. Cover and refrigerate for at least 30 mins.
3. Pre-heat oven to 400 and line a baking sheet with parchment.
4. On a floured surface, place dough on counter. I knead mine into a round ball and then flatten with a rolling pin to about 1/2 thick.
5. Take a biscuit cutter (I love my fluted one – mason jars work too!) and dip it in flour so the dough doesn’t stick, and cut out your biscuit rounds. Transfer to baking sheet and line them where they touch.
6. In a small dish, beat your last egg and tablespoon of buttermilk and brush over biscuits. I’ve also done this with just some melted butter.
7. Bake until golden brown. Sometimes it takes 15 mins, sometimes longer. I always eyeball it and never trust a timer. :)
8. Serve with homemade grape or plum jelly. My recipe for those are coming this summer!
