This recipe is so delicious and can be doubled as breakfast or dessert! I love the freshness of the berries and the richness of real maple syrup. I also think a little raw honey would really send it over the top. Feel free to swap ingredients as you see fit. Add more French bread if needed.
Ingredients:
12 cups of French bread
8 large eggs
2 cups milk
3 tsp Mexican Vanilla
1 1/2 tsp cinnamon
2/3 cup brown sugar
1 cup strawberries sliced
1/2 cup blueberries
2 tbsp powdered sugar
Real maple syrup
Directions:
Grease a 9 x 13″ glass casserole dish with butter. Cut up French bread into cubes and add to the casserole dish until it is 3/4 full.
In a mixing bowl, combine eggs, milk, Mexican vanilla, cinnamon, and brown sugar. Whisk mixture and mix well. Pour all over into the dish.
Hull and slice strawberries and top over the casserole along with blueberries.I also think raspberries would be delicious if you’d prefer to swap.
Add a cover to the baking dish cover and refrigerate for four hours, or up to overnight.
Pre-heat the oven to 350 degrees and bake for 35-50 minutes. Check at the 35-minute mark, and if it is not done bake for longer. Remove from oven.
Sprinkle with powdered sugar and scoop out a serving to a plate. Drizzle with maple syrup and enjoy!
