Sharing a recipe that takes a little prepping but is SO nice to have on hand for breakfasts for not only the farmer or rancher in your life, but also those kiddos! These serve us well on busy homeschool mornings when I don’t have time to cook. I love being able to make ahead breakfasts and these are wonderful.
I used ground pork, fresh eggs, mexican blend cheese, and from scratch tortillas from our local Mexican restaurant. (I bought 2 dozen for $5.95) Wrap them up and freeze for later. I was able to knock out 2 dozen in a short about of time.
Brown the sausage, cook the eggs, and get your ingredients in an assembly line for easy prep. Cut sheets of parchment and foil so the burritos don’t get freezer burnt. Build your burritos and wrap in parchment then foil. Put in a ziplock bag and seal, taking all of the air out.
When you’re ready to eat, place on a baking sheet in a 350 degree oven for 20 minutes. Serve with a ramekin of salsa.
If you want to make for a crowd for a branding day or gathering, just make the burritos, wrap in foil, and go! Take some fresh avocado and salsa with you. Feel free to swap for beef sausage and add in onions and peppers to yours. Enjoy!
