I’ve had a few requests for more Asian inspired dishes lately so I thought I’d share this easy recipe for you to try! I made this for my husband who is the one in our home that LOVES Asian food and he really enjoyed it.
Egg Roll in a Bowl
Ingredients:
1 tsp avocado oil
4 tbsp garlic, minced
1 lb ground pork
1/4 tsp salt
1/4 tsp black pepper
1 tbsp ginger
4 cups coleslaw mix (can use ready to go or make your own)
1/4 cup green onion
1/4 cup coconut aminos
1 1/2 tbsp sesame oil
1/2 tbsp rice vinegar
1 tsp red pepper flakes
Spicy Mayo Sauce:
1/2 cup mayo (I make my own)
1/2 tbsp rice vinegar
3 tbsp mule sauce (or favorite hot sauce)
juice of one lime
1 tbsp coconut aminos
1 tsp sesame oil
Directions:
Heat a cast iron skillet over medium/high heat. Add avocado oil and then the ginger and garlic. Saute.
Add in ground pork and cook until it is brown, breaking up in crumbles.
While pork is cooking, whisk the coconut aminos, sesame oil, rice vinegar, and red pepper flakes in a separate bowl.
Once you have the pork completely browned, add in the coleslaw mix, green onion and the liquid mixture. Saute until veggies wilt and are tender. Remove the skillet from heat.
Make the sauce by mixing all the ingredients in a bowl. Get 4 separate bowls and evenly divide egg roll mix into each. Drizzle sauce over each and serve!
