Last week in my meal plan, I used a salsa chicken recipe that is delicious by itself. However, I decided to take it up a notch and elevate the spicy bird into an easy favorite. Who doesn’t love nachos? I wanted to share here BECAUSE this is also a super way to make a meal for a crowd, easy transportation, and minimal dish washing involved once all said and done. I love this as a Hayfield Meal! Also a great option for birthday parties, game nights, etc.

Once you have your chicken cooked. I line a sheet pan (or two if you have a crowd) with parchment paper. Next I cover with chips and top with the chicken and shredded cheese. Pop in the oven until cheese is melted.
Then I add our favorite toppings:
cherry tomatoes
onion
jalapenos
cilantro
avocados
salt and pepper to taste
sour cream
If I’m taking this out to the field, I cover it with foil, put in the back of my car, and we make a nacho bar on the tail gate. I love that they have sour cream in a bottle that you can squeeze now, it makes things like this much easier.
These amplified nachos are so good and easy! A great budget meal. Enjoy!
